Green Sandwich

Making a zucchini sandwich

Instructions Printer-Friendly

  • Introduce a child to a whole green zucchini
  • Wash and carefully peel the zucchini (some people like to eat the peel too)
  • Slice the zucchini into thin slices
  • Mix softened cream cheese with green food coloring
  • Spread a slice of zucchini with the green cream cheese and add another slice for top
  • Serve as a snack or with a meal

 

* Knife use is for ADULTS only!

 

Here is a video that shows how to grow your own zucchini or courgettes

Simplify

Encourage the child to find a zucchini or courgette at the store. Ask them where in the store would it be found. At home, let the child feel the zucchini skin and do the washing of the vegetable. When they taste the zucchini let them describe in their own words (crunchy, sweet, moist, etc.)

Extend

Explain that zucchini is a vegetable and ask what that means to the child. Review the 5 major food groups and ask child to name a food that fits into each group.
